First Look: Dream XI’AN: Wednesday March 27th
Dream XI'AN soft-opened last month from Chef Guirong Wei, also behind Master Wei and Xi’an Impressions. With Dream XI'AN, Wei is expanding the menu significantly to further showcase the rich cuisine from Xi’an, the capital of China’s Shaanxi province.
In Chef Guirong Wei’s own words:
What inspired you to start Dream XI’AN?
I want more people to know about Xi’An. Xi’An is the longest-established capital in Chinese history, especially in the Tang Dynasty. The city was called Chang’An in ancient times, which is why the Chinese name of the restaurant is actually ‘Dream Chang’An’.
Which new dishes are you most excited about at Dream XI’AN?
I would like to introduce you to our crispy chicken wings, Xi’An beef tripe and Wei’s steamed pork ‘xiaolongbao’. These are signature dishes of Xi’An, I would always want to introduce them to customers, but since the kitchens in the previous three restaurant were too small, now, I finally have a place spacious enough to make them, do have a try :)
What are your favorite Xi’an dishes?
My favourite dishes are biang biang noodle and pulled pork burger. They are the oldest wheat-based dishes.
As part of our First Look series, we will be trying out dishes that Chef Guirong has personally recommended including: salt-and-pepper spare ribs, Wei’s steamed pork xiaolongbao, Xi'an pulled pork burger, Xi’an biang biang noodles, crispy chicken wings and more!
